I made this Chicken Scallopini last week for our family.
I was hesitant as I was not sure if the children would like it and WOW they LOVED IT !!!!
A simple recipe that I served with mash potato and baby broccoli.
Preparation Time:5 minutes Cooking Time:20 minutes
3 Chicken Breasts sliced length ways
4 Rashers of Bacon sliced rind cut off
1 brown onion diced thinly
3 field mushrooms or a decent handful of button iced into 1/4s
1 Clove of Garlic
1/4 Cup White Dry Wine
250ml Cooking Cream
1/2 Cup Chicken Stock
Pinch Pepper to Taste
2 Tbs Olive Oil
Heat oil in pan, cook chicken until almost cooked, remove from pan.
Add onion, bacon, garlic and mushroom, sautee for 3-4 mins
3add wine, cook off for 30 seconds, add Chicken stock and bring to boil, then add cream, bring to boil
4add pepper to you liking, put chicken back in pan and simmer for about 5-7 mins, or until chicken is cooked through.
Remove from pan, turn up heat and reduce sauce to a nice thick consistancy.
Serve with your favorite vegetables, chips and salad or pasta. ENJOY !
